100g raisins or dried dates
1/2 squeeze of lime
200g unsalted butter
100g golden syrup
100g caster sugar
25ml Hygge rum
250g jumbo oats
100g plain flour
50g almonds, crushed
Preheat the oven to 160C/140C Fan /Gas 3.
Line a baking tray with grease proof paper.
In a larger pan place the butter, golden syrup, lime juice, caster sugar, and Hygge rum. Heat gently, stirring occasionally until the butter has melted and the sugar has dissolved.
In a mixing bowl, add the oats, flour and almonds and then mix thoroughly. Pour in the rum butter mixture from the pan. Mix everything together thoroughly.
When thoroughly mixed and there's no dry mixture hiding at the bottom, spread the mixture out in the tin and bake for 25-30 minutes until golden brown.
Cut into squares whilst still warm, then leave to cool.
